Imagine dipping a warm, crusty hunk of bread into a sauce that hits every corner of your palate like a sunburst—bright, herbal, tangy, and utterly alive.

This mojo verde, a classic from the Canary Islands, is a vivid green marvel that embodies the volcanic soil and sea-kissed air of its homeland.

At first taste, there's a clean, almost electric zing from raw apple cider vinegar, its fermented tang softened by the velvet touch of sunflower oil and the grassy richness of extra virgin olive oil.

Then comes the green wave: spring onions and coriander—both fresh, raw, and abundant, creating  a bright, almost effervescent "herbiness".

Raw garlic, brings heat and depth, while whole toasted cumin seeds, lightly toasted before blending, add a smoky, earthy whisper that lingers long after the bite.

Sea salt draws out every flavour, sharpening and defining the edges, while lemon juice punctuates the whole experience with a final, sunny kiss of acidity.

Ground black pepper finishes the balance with a gentle, fragrant warmth.

Poured over traditional papas arrugadas (wrinkled potatoes), grilled vegetables, or fresh seafood, it transforms the simple into the sublime.

CANCHA MOJO is NOT a LONG LIFE PRODUCT.

CANCHA MOJO is made in a traditional method, using quality oils and vinegars, we will never add artificial preservatives, flavours or stabilisers, and we do not pasteurise our MOJO either,  because that would mean sacrificing the freshness and vibrancy of the Canary Island flavours you love.

 CANCHA MOJO has a naturally low pH, and ours has been tested under laboratory conditions, so we know it will last 2 weeks after production when kept kept chilled, so be sure to check the USE BY date , and keep it in the fridge as you use it all up.

Fresh is ALWAYS best!

If though, for some inexplicable reason, have some left and you think it might be going to waste - stick it in the freezer, until you want to use it, let it come to room temperature... and enjoy!
